Vangi Cha Bharit /Bagan Ka Bharta



1 big brinjal/Eggplants (about 1/2kg)
1 teaspoon cumin seed
 Asafoetida /hing a pinch
2 cloves garlic chopped
1 lage onion chopped
2 medium tomato chopped
1/2cup boiled green peas
1 teaspoon red chilli powder
1 teaspoon goda masala
1 teaspoon garam masala
1 teaspoon turmeric
1 tablespoon green corriander chopped
Salt to taste

Method
Roast brinjal on a gas cooktop by just placing straight on the burner
and keeping the flame on low setting. Keep turning and cooking till all the skin on the brinjal is charred and the inner flesh looks really soft. Once the brinjal is roasted, allow to cool fully
 and then peel off and discard the charred skin. Once cool, coarsely mash / cut and keep aside for use.
 Heat oil in a pan add asafeotida , cumin, garlic and onions chopped
. Saute until aromatic, onions gets soft and golden in colour add tomatoes chopped stir it cook 5 min
              
until the tomato leave the oil
                                           
 ,now add all dry spice turmeric , red chilli powder , goda masala, garm masala and mix well
 now add mashed brinjal and mix well now add boiled peas add mix well
 cover it and cook it for a while garnish it coriander serve hot with bhakri or roti enjoy Kritika's cuisine..
