Palak paneer / Cottage cheese in spinach curry 



Spinach pureed 2 cups ( blanch in hot water with pinch of salt for 2 to 3 minutes and make pureed )
Paneer ( cut into cubed) 300 grams
Butter 2 teaspoon
Cumin seeds 1 teaspoon
Cloves 2
Cardamom 2
Cinnamon stick one inch
Bay leaf
Black cardamom 2
Black pepper 6 /7
Onions 1 big ( finely chopped)
Ginger garlic paste 1 teaspoon
 Green coriander and green chilli paste 1 tablespoon
Coriander powder 1 teaspoon
salt to taste
Garam masala powder 1teaspoon
1/4cup fresh cream

Method
Heat butter/oil in a pan and add cumin,cloves,cardamom,cinnamon,bay leaf ,black cardamom,black pepper when it splutters add onion chopped ,saute till a light brown then add ginger & garlic paste saute it for a minute ,when butter is separates form the onion garlic &ginger paste then add green coriander and green chilli paste stir it over slow medium flame,add coriander powder and gram masala saute it for a minute then add spinach pureed saute it for a 3 to 4 minutes add salt,(add water if required for the gravy consistency ), when gravy comes to a boil, add the paneer and fresh cream and mix well .
Serve hot with roti, naan ,any other indian flat bread or steamed rice.

eggless fruit cake




Ingredients
1 cup Maida
1/2 cup sugar powder
1/2 cup oil
1/4 teaspoon baking powder
1/2 teaspoon baking Soda
2 tsp Vanilla essence
1 cup milk
 1cup ( little bit lesser then it ) Tutti frutti,raisins,cashews,almond and pistachio (u can choice other nuts )(i like more nuts and tutti frutti so i use 1 cup u can use 1/2cup of nuts)

Method
Preheat oven at 180° for 10 min .
Finely chop cashew ,almond, pistachio and raisins and soke in water for 10min,
sift together maida,baking soda,baking powder,
and now remove water from dry fruits and add dry fruits in madia mix
Then add oil ,milk mix  and vanila esence and mix well .
 greace the tin with oil apply butter paper pour the mixer in tin.
keep in preheated oven at 180° abt 30 to 40 min depends on otg keep checking after 30 min. Once cake done let it cool down and decorate with powdered sugar or as u want fruitcake is ready to serve.

instant 5 minute sabudana khichdi in microwave

Ingredients
Presoaked sabudana 1 1/2 cup
Boiled chopped potatoes 1
Roasted peanuts powder 1/2 cup
Cumin seeds/jeera 1teaspoon
Chopped chilies 1-2
Oil 1 tablespoon
Chopped coriander leaves
Rock salt as per taste

Method

Heat oil in microwave safe bowl,for 30sec,add cumin seeds, chilies,this will go in the microwave for 30 /40 sec .Now mix potatoes ,sabudana, peanuts powder,salt, this will again go in the microwave for 3-4min garnish it with green coriander enjoy Kritika's cuisine

coconut ladoo

Ingredients

2 cup fresh Coconut grated
1/2cup powdered sugar
1/4 cup milk powder
2 cup milk
1/4 teaspoon cardamom powder
1 tablespoon ghee

Method

Heat a ghee in a pan and place the grated coconut and roast slightly,cook over low flame mixing it continuously for about 5 minutes. add milk powder and milk and Keep stirring frequently to avoid the milk from getting burnt.when milk reduced add sugar and cardamom powder. When the mixture leaves the sides of the pan, remove from flame & let it cool down for about 15 minutes.apply some ghee on your hands and make even sized balls out of coconut mix . In flat plate , add dried coconut powder and roll each coconut balls ( ladoo)in it, so that the powder coats well onto the ladoo. Enjoy ur ladoo. on the ever indian occasion or festivals

Vegetable cutlet 


Vegetable cutlet is a very popular appetizer and fried light snack
I love  to have cutlets specially on rainy romatic evening with a cup of coffee.
Ingredients

2 big size boiled potato
1 tablespoon Onions chopped finely
1 tablespoon french beans/ green beans
1tablespoon american sweet corn
1 tablespoon green bell pepper
1/2 cup bread crumbs
1 teaspoon Ginger garlic paste
1 teaspoon Kashmiri red chilli powder
1/2 teaspoon Garam masala powder
1/2 teaspoon chaat masala powder
1 tablespoon Green coriander chopped
Salt to taste
Oil for deep frying


Method


In a large bowl mix potatoes, onions ,green beans ,bell pepper,american sweet corn,ginger garlic paste, bread crumbs ,coriander, red chili powder, garam masala, chaat masala and salt.


knead to make a dough.

make a shape of cutlet mix as u want and roll each cutlet piece in bread crumbs or corn flakes

Heat oil in a deep frying pan and deep fry the cutlets until golden brown.

 Cutlet are ready serve delicious cutlet with green pudina chutney

Sabudana wada 


Sabudana vada also called 'sago vada', is a traditional snack from Maharashtra.
I made sabudana vada in an Appe pan, with 2 drop of oil .They turned out crispy and soft


Ingredients
2 cup sabudana (sago)
2cup potatoes, boiled and mashed
4 tbsp roasted peanuts powder
3 tbsp green coriander chopped
1 green chilly chopped,
1 tsp jeera(cumin )
Salt to taste (i used rock salt /sandha namak)
Oil 1 tablespoon

Method.
washed and soaked in water enough to cover the sago for 2 to 3 hour then drain any water
Mix soaked sabudana ,potatoes ,peanut powder,bgreen chilly, choriander ,jeera,salt all the ingredients together

Make small balls of the dough

Heat Appum pan on medium heat.Drop 1 or 2 drop of oil in it ..
and put in each indent of the appe pan
Let cook for 2 to 3 minutes then turn, so that it cooks on the other side.
The other side will cook quicker, so cook may be 2 minutes on the other side.
Enjoy with peanut chutney

Daliya & Moong Khichdi

 Daliya & Moong Khichdi full of taste, flavour and nutricious as well .It is a very light & healthy meal.


Dalia ( Cracked Wheat) 1 cup
Dhuli moong dal ( Split and husked green gram ) 1 cup
Ghee / oil 1tbsp
Tomatoes (medium) 2 to 3 chopped
Green peas 1/2 cup
 Carrot chopped 1 tbsp
 Potatoes chopped 1/2 cup
Water 4-5 cup
Jeera(cumin) ½ tsp
Haldi powder (Turmeric powder) ¼ tsp
Green chilli 2-3
Salt as per taste
Green coriander ( dhaniya) 2 tbsp finely chopped

Method

Wash mung dal and dalia,and soke it for half an hour .heat ghee /oil in a pressure cooker ,add jeera (cumin), gren chilli ,chopped tomatoes saute for a 2to 3 min,now add chopped carrot, green peas, chopped potatoes(or you can add veggies as per your choice) saute it for a 5 to 6 minutes ,add haldi and salt mix it well ,rinse daliya and moong dal in cooker add water stir and pressure cook for 4 to5 whistles till the dalia is cooked well. garnish khicdi with coriander leaves and serve hot with kachumbar salad ,raita ,achar .

Dal makhani

Restaurant style Dal Makhani


1 1/2 cup whole urad dal (whole black lentils )
1 cup red rajma (Kidney beans)
2 tablespoons chana dal (gram dal )
1 teaspoon ginger garlic paste
1 cup  onion chopped
1 cup tomato puree
1 Bay leaf
1/2 teaspoon haldi (turmeric)
salt to taste
1/4 teaspoon garam masala
1/4 cup fresh cream
2 tablespoons ghee ( clarified butter)
1/2 teaspoon jeera(cumin seed )
1/4 teaspoon lal Mirch powder (red chili powder )



Method

Soak rajma and urad dal ( lentils and kidney beans) overnight or atleast for six hrs ,After soaking, dal will be about two and a half times the volume .

rinse them well in cold water,place dal in a pressure cooker with 5cups of water and turmeric chilli powder , G&G paste &salt  for 3-4 whistles or cook until cooked, almost mushy. Lightly mash the kidney beans and dal .
heat a pan add ghee , jeera,bay leaf, and onions chopped .
Saute until aromatic, onions gets soft ,  stir it about a min now add tomato puree cook for 2min
Add and garam masala.
 add dal and rajma mix reduce the heat to simmer, add close the lid and slow for 5min
 Add fresh cream and green coriander.
Dal makhani is ready to server enjoy with naan , rice ,or any other indian flatbread .
