1cups spinach
2 medium size potatoes boiled
1 cup peas
1 cup grated paneer
1 teaspoon chaat masala powder
1 teaspoon gram masala
2 teaspoon ginger-green chili paste
3 tablespoon besan (dry roasted)
salt as required

Method

Blanch the spinach . drain and keep them in a cold water. finely chop the spinach and keep aside.
boil the peas. mash them .
 in a bowl take the chopped spinach. Mashed potatoes add the peas ,green-chili paste chaat masala garam masala , salt, besan mix all ingredients well and make a dough

 , now shape into round patties
 and heat a oil in a pan to shallow fry the kababs till golden brown.

Rajasthani Mirchi Vada

Rajasthani mirchi vada, are an amazing blend of spicy flavours. This farsan is quite popular in Rajasthan.

ingredients
Green Chillies (Bhavnagri mirchi) 7-8 large
Oil for Deep Frying

For batter
Gram flour (besan) 2cup
Turmeric powder 1/2teaspoon
Salt to taste
Water as required
Stuffing
Potatoes boiled 2
Red chilli powder 1 teaspoon
Coriander leaves chopped fine 1 tablespoon
Chat masala 1 teaspoon
Salt to taste

Method

Slit the green chillies, remove seeds and keep aside.
Stuffing

 Peel and mash potatoes well. Add chilly powder , chat masala and coriander leaves. Mix well.

Fill the chillies with the potato mix.

Batter
Mix the besan and salt.Add just enough water to make a batter, niether too thin nor too thick, kind of medium.
Heat oil in a kadai.now dip stuffed chillies in the batter one by one.
Deep fry 1 or two piece at one time, so that they fry evenly and shape stays. .Deep fry them till golden brown, and crisp
.Remove on paper napkin serve it with tomato sauce or imly chutney Kritika's cuisine

Matar ki khasta kachori

Matar ki khasta kachori



For cover
2 cup maida
2 tablespoons ghee
1 teaspoon baking powder
1 teaspoon salt
Cold water for making dough

for the stuffing
1 1/2 cup peas
1/2 teaspoon red chili powder
1/2 teaspoon amchur powder
salt to taste

Method
In a big bowl add maida , ghee , baking powder and rub it into flour using your fingertips.Knead dough adding little water at a time,keep the dough a side and let it rest for10 minutes
 stuffing:
boil the peas. mash them
heat oil in a pan . Mashed peas and other species and salt .

Kachori
Now divide the dough it into equal portions, make smooth ball and flatten and roll it evenly into circle. Take one roll of maida and make an impression in the middle with your thumb to make it look like a small cup.put some of the stuffing in the center. Apply water on the edges.


bring together all the edges and pinch them. press the edges downwards below.
roll into add some of the stuffing in the center. brush some water on the edges.

roll into a 4-5 inches kachori. prepare all matar kachoris like these. keep the kachoris covered with a wet cloth.
Now heat a oil in a kadai and fry gujiya one by one on a low medium flame fry till it become golden and crispy ,take out in a paper and store in an airtight container when completely cool.
serve matar kachori hot with some coriander chutney or tamarind chutney.

Instant Eggless Chocolate miffins in 1 mins


Instant Chocolate miffins in 1 minute

maida 1/2cup
Sugar powder 1/3cup
Unsweetened cocoa powder 1 tablespoon
Pinch of soda
Baking powder 1 teaspoon
Oil 1 /4 cup
Milk at room temperature 1/2 cup
Vanilla essence 1/4 teaspoon


Method


In a bowl Sift the flour , soda ,baking, coco powder mix dry ingredients , now add oil and milk mix all dry and wet ingredients well
now pour mix muffin batter, into miffin tray ( I used paper cups here )Fill the cups with the muffin batter till they are 3/4 fill leaving space for the muffin to rise while baking /cooking
 .Microwave for 1minute. Check it with toothpick .. if not done then microwave it for another 10 sec... when its done.... Take the tray out and let it come to room temperature.

For cover

1 teaspoon salt

1 teaspoon nigella seeds (kalonji)
2 teaspoon fennel seeds
2 tablespoons besan
2 teaspoon coriander powder
1 teaspoon amchur powder
2 tsp chilli powder
salt to taste
 Method
In a big bowl add maida , ghee , baking powder and rub it into flour using your fingertips.Knead dough adding little water at a time,keep the dough a side and let it rest for10 minutes

Heat oil in a pan, add the nigella seeds, fennel seeds, and onions, mix well and saute on a medium flame for 5 minutes.
Add the besan and spices and salt and cook on a medium flame for 2 minutes, while stirring occasionally. Remove from flame let it cool down .
