Ingredients
250 grams bathua leaves (Goosefoot leaves)
3 cup + 1/2 cup wheat flour (if required
Salt to taste
2 green chili
Hing a pinch
2 tablespoon white sesame seeds
1 teaspoon ginger garlic paste
Oil for cooking pratha
Method:
In a big bowl wash bathua leaves and remove the mud

. Now in a vessel boil it for about 5 minutes While boiling you don’t need to add water. Switch off the flame when you see the leaves is reduced in a quantity. Let it cool down at room temperature ,
now in a grinder jar take bathua ginger and garlic paste ,jeera, green chilli , hing
grind it a make a smooth paste (without adding water)
In a big bowl add flour and bathua paste 1tablespoon oil , sesame seeds , salt and rub it into flour using your fingertips
.Knead dough adding little water at a time. Let dough rest it for 10 minutes
. Now divide the dough it into equal portions, make smooth ball and flatten and roll it evenly into circle
. Heat the pan /tawa and put the paratha on it. Drizzle some oil and cook the paratha on medium flame until light golden spots appear from both the sides. Bathua paratha is ready, serve hot with chutneys / raita /aachar . Enjoy Kritika's cuisine..
